I did the research as to why there is the super old hams like 300 year old balls of mould like tennis balls, that go for $5 million at Auction etc., and yet there are no ancient cheeses...
And I forget the exact answer (I have it stored somewhere) but the cheese rots into a calcium block and the fat becomes oxidised and acidic and the acid eats the calcium and it all turns into a hard little lump that slowly fades away....
Or something like that.
