Hmmmm it's an interesting thing that allowing for variations in local foods and furnishings and clothing types and climates, that "the markets" are fairly similar, all around the world....
People universally buy the same kinds of things.
And fresh food - meat, vegetables and fruit... Fantastic.
Their lack of refrigeration is a bit of a concern, for anything other than fresh meat, killed and bought within hours and chilled ASAP.
Especially if the ambient temperature is warm to hot.
As you can tell by the smell, the fragrance of rotting meat and blood etc., that probably never gets hosed out often and the lack of refrigerated cabinets, to store the fresh meat in, is not a good thing.
Here are some hot sauce recipes.

Louisiana Hot Sauce Ingredients
1 Pound Chili Peppers chopped
2 Cups White Vinegar
1 Tablespoon Salt
Louisiana Hot Sauce Directions
Add all the ingredients to a pan over medium high heat.
Simmer for 10 minutes – until the chilies are soft.
Let the mixture cool to room temperature, then blend till smooth.
Strain the mixture and bottle.
Because of the vinegar, this hot sauce will keep for months.
