Taking a shit off the side of the road can be pretty difficult.
however I guess a person could purchase themselves a 5 pound bucket and some trash bags and maybe a toilet seat that'll fit on that bucket and then get themselves a large fridge size cardboard box for privacy, that you can set up within a few seconds poke some holes in it for ventilation maybe add some handles on the bottom for easy lifting and transporting.
